Well, I made this yesterday and I think my chicken was too big. It barely fit in the crockpot and wound up sitting in its own juice. The meat was even a little dry. I guess I cooked it too long. I will try a fryer chicken the next time instead of an oven stuffer and hopefully I'll have better luck next time.

I can't wait to try this recipe. I'm all for fast and easy. The potatoes at the bottom is a great idea. Thanks.

Made this tonight and it was super dooper yummy!!! I used sweet potatoes in the bottom wrapped in foil instead of the foil balls. They were PERFECT. I don't even like chicken or potatoes LOL! Defiantely a keeper recipe Thanks a bunch Blondie!

I love this thread so much i just keep coming back! Experiments abound tonight at PattiNic's house. I had some split chicken breasts with the skin on. Spritzed them with cooking spray and sprinkled with Adobo. We'll see how they come out. I'll be back to let you all know. Did I mention how much I loved this chicken? LOL. Well I'm editing to let you all know that the chicken breast on the bone came out equally as yummie in the crockpot though I did take the chicken out at 3.5 hours. YUM! patti

Pattyinc, did you take the skin off before you cooked them? I'll have to try that after I cook the whole chicken I've got in my fridge. My kids will eat dark meat, but I'd rather make just the breasts if they'll turn out just as good. Thanks for the idea!

I made this this week along with Baked Fries and my DH just couldn't believe that I made it. Poor guy was stumbling over his words trying to apologize saying it tastes exactly like the chicken and "jo jos" we get at the grocery store.

Patty -- no I did not remove the skin first. I just ripped it all off after it was done and threw it away.

I've been looking for a great recipe for the church potluck next week. I think this might be it. Sounds fantastic. We have a really big crock pot & I think I could get two chickens into it. Thanks for submitting this recipe.

Hi,
How big does the crockpot need to be for 3-4lb chicken? I made one today with potatoes at the bottom in my 2.5Q pot and the chicken never browned although the bones slid right off of it! I found it to be too pale...any suggestions?
Also, where do you get Lawry's seasoning?

I make this all the time, but everytime I season differently, and it's always good. Certainly you can use Lawry's, but you can be creative as well. ;D

I'm cooking this today. My mother-in-law does a great cornish hen, and she always peels an onion and umm sticks it where the sun dont shine, and that really adds a lot of flavor. So we'll see how it does w/this recipe.
I forgot at first about the olive oil spray, and already had it coated in Lawry's before I remembered. When I thought of it, I went ahead and sprayed it, then sprinkled a lil more Lawry's on. I have a big oval crockpot, but I think I made my aluminum foil balls a bit too small cause my chicken is still touching bottom in places. But by then I was over it and just left it as it was, LOL. Can't wait to taste it!!
