Pam,
My husband was on vacation in 1977 and his cousin set us up on a blind date. We saw each other five times in southern Calfornia, met in England in the spring of 1978 and then went to visit his family in Lebanon. While in England we became engaged and were married in June of 1978. We have lived in Jordan, Saudi Arabia and Lebanon (and the USA for awhile) AND have been through parts of the Lebanese Civil War, The Gulf War in 1991, Grapes of Wrath Invasion in 1994 and this most recent war last summer. We were evacuated once and opted not to leave during the others. So...interesting life, interesting places and now settled in a small village in northern Lebanon on a hilltop overlooking the Mediterranean Sea out my back door and a valley from which the mountains climb up to where the cedars of Lebanon are diminishing. Great and beautiful county my husband comes from but it seems it has always been fraught with troubles.

Mnightsinge...my biggest reward will be when my family arrives in June...being able to be comfortable in my summer clothing when taking them touring around the country! Right now the winter things are a might tight The food choices are usually not too bad it is perhaps the quantities that do me in or maybe not exercising enough or??? Anyway...what will be will be and the idea is to eat healthy and be happy, right? Cathy in Fih, Lebanon

Some days are better than others. I find that I do alright through lunch but seem to have trouble in the afternoons...then with working outside till later in the day wonder if I should skip dinner since it will be eaten close to bedtime. Anyway... April 27 BREAKFAST: bulgur and farina with apple, nonfat milk, walnuts and drizzle of carob molasses LUNCH: mjudra (lentil and bulgur dish) with cabbage salad (more than one vegetable in it and dresesd with olive oil, garlic and lemon juice) and wine DINNER: skipped it due to the snack earlier SNACK: peanut butter, butter and sugars mixed together...made me feel horrible the rest of the day One of these days I will get it right Cathy in Fih, Lebanon

BREAKFAST Coffee Tsp olive oil in pan to cook 2 eggs in labne ¼ avocado Tabasco Above wrapped in ½ loaf Arabic bread Banana
LUNCH Chicken breast with toom (garlic paste) ¼ loaf Arabic brad leftover coleslaw artichoke with labne blue cheese dip
DINNER Chanklesh with olive oil Arabic bread Bit of apricot jam
SNACKS Nuts

LOL It has been a few days since I last posted. Trying hard to eat CORE foods but limiting the amounts by using the Mayo Clinic Food Pyramid...and the lower calorie plan...at least for a few days. I am hungry!!! That has to indicate something...not sure if it is a good or bad something, though. Keep you posted...and perhaps post a journal tomorrow, too. Cathy

This morning I woke up and realized that tomorrow will be my birthday. My next thought was...what would I really like to give to myself this year as a gift? And, the answer that came back was "a healthier me"...so...with that in mind...am beginning to do just that as of this moment

Yesterday was my birthday...thanks, Cathy, for the birthday greeting. My husband and I went for a drive, visited friends, had a nice fish meal overlooking the sea, bought wonderful new plants to put into the garden and then had a thunderstorm crashing and banging through the night to celebrate my day. I didn't eat 100% on program but in keeping with the health idea realize that my outing counts for social and emotional well being, right?
Food Eaten yesterday: egg on polenta with cooked tomatoes and some oranges baked fish with tahineh sauce, french fries and ketchup, a few cookies with meringue and some fruit spaghetti with tomato sauce and cheese
Today is grey and gloomy. Think I will fold laundry and focus on getting some exercise in and sticking as closely as possible to healthy Core food choices.

Okay...have decided to start journaling again. Not sure yet what dinner will be but will put down what today's first day back on Core has been so far.
Breakfast: polenta with tsp olive oil, corn, kidney beans,green pepper, tomato, nonfat cheese and salsa mixed with labne
Lunch: bulgur mixed with garbanzo beans, labne, olive oil, cucumber, mint and garlic
Snack: Fresh figs and grapes
Dinner: TVP in a labne-mustard sauce flavored with onion and garlic, brown-red rice mixture and grapes for dessert.
It is nice to feel motivated again.

Day 2 back on program...it was a good day. I opted to have a light dinner and the scales were nice to me this morning.
BREAKFAST: green tea 1/2 cup oats (dry) in 1 cup nonfat yogurt 1 chopped apple mixed into above with tbsp flax seeds (1 point)
LUNCH: teriyaki filet steak potato/green bean salad with lemon juice-tsp olive oil-garlic- salt dresing figs
SNACK while playing cards with friends: Popcorn (not sure it was core but better than some things) diet soda 2 glasses of white wine (points)
EVENING: 3 small cucumbers nonfat milk
So far so good...

Day Three back on program and I have lost 3.2 pounds...must be working! I have cut back in the evenings and only eat if I am hungry and what my body seems to want/need.
BREAKFAST: green tea 1/2 cup oats in 1 cup nonfat yogurt with chopped plums and banana topped with Flax Seeds
LUNCH: filet steak on skewers with onion, tomato, okra eggplant salad chard ful (beans) olive oil, lemon juice and garlic/onion on most of above beer (points)
EVENING: figs and grapes nonfat milk

Kind of lost focus around sunset but am back on track today.
Breakfast: green tea polenta mixed with green pepper, kidney beans, nonfat cheese, etc and topped with labne and salsa grapes
Lunch: eggplant leftovers mixed with whole wheat couscous and green beans small filet steak with teriyaki marinade oil drizzled on couscous
Snack: popcorn and beverage
no dinner
