Aha.... This controversial...what is and what is not...CORE thing Having been here since the beginning (nearly) of CORE and of counting points and perhaps even of counting exchanges...it seems I chase the elusive of what is/is not whatever program may be in vogue. That said...I will look up the muffins Hugs Cathy in Fih, Lebanon with a cat on her lap that does NOT want to get fat eating rodents...is ther ea message for me here??? March 30, 2007Breakfast1/3 cup oats mixed with 1 cup nonfat yogurt and 1 grated apple and 6 chopped almonds and cinnamon Lunchpolenta topped with mashed kidney and garbanzo beans topped with chopped avocado and tomato and labne nonfat cheese olives on the side Dinnerchicken breast garlic 1/ 2 tomato wine Snackstastes of olive oil banana the oil tasting was to see if someone's fresh from the autumn harvest oil was BAD or just HEALTHY. We said bad after the burn in the back of our throat but came home and tasted our own and it had the same burn...called the relative and told him his was fine and the burn was a good thing. My weight this morning was 171.5 and though some of that may be dehydration due to the wine I am thrilled to see the number rather than the 180 seen on the 19th! Starting week 2 on Core and think that if I do set aside an official weigh-in day it might be Wednesday as that was my original weigh-in day many years ago AND because we usually have our ladies luncheons on Wednesdays. Another busy day in the garden. The plow came and did most of the land in our lower field and then my husband and I worked to finish tying the grapevines to their supports. A nephew stopped by later in the evening. We had a bit of rain during the night and today...well...who knows what today will bring Thank you Sulee and Vita for the comments. It is gorgeous here...kind of reminds me of a miniature California. The view of the sea on one side of the house and from the other a valley with mountains covered with snow and sparkling with village lights at night is very special. Recently I have been thankful more and more often for the place I live and the life I have...even though it is so far from my original home and most of my family. Yesterday I was busy with my husband in the garden trying to get a few things done before the rain arrived. He says there is a proverb here that says a palm sunday without rain would be like a bride without tears. Anyway...we dug two ditches and then put long branches near the base of two grapevines underground so they can grow in a new spot This bypasses a few years of keeping a cutting in a pot then transplanting, etc...and you can get grapes from the new location immediately while the spots on the vine that would have had grapes or leaves become rooting sights instead as they are underground. Learned a trick using a rope to assist the person with the shovel lift the dirt, too, and today my back is a bit sore from being the assistant OR from planting seeds...

Breakfast coffee 1/3 cup oats with 1 cup nonfat yogurt with 6 chopped almonds and chopped strawberries tsp sugar
Lunch salad: chicory greens, oranges, avocado, vinegar, sugar, salt, pepper and some hot sauce bulgur with chicken and garlic
Dinner whole wheat pasta chili labne hot sauce wine nonfat milk (2 servings before bed)
The scale budged big time at the beginning but seems to be moving in the opposite direction the last few days...need to make some changes, I think.

What a nice proverb about Palm Sunday and the rain....rain is good so good especially for fertile lands like those you live on, funny we had rain here yesterday for Palm Sunday, kinda dreary and gray, but after reading your proverb....
Your property sounds so lovely, I too paint the picture in my mind...looks beautiful.
And your menus always sounds so good - fresh produce and grains - how great! You mention labne a lot, what is that?

Beth - I will try to post a picture sometime...if I can figure out how to... I kind of blew it for lunch today...the carpenter stayed later than expected, we were hungry and opted to get manoosh instead of eating Core foods. Oh well...bread won't kill me nor will real cheese Cathy in Fih, Lebanon

Wasn't hungry at bedtime and if I had not stayed up later would not have had that last meal of the day...oh well...will do a better job today!

I am part Middle-Eastern and love me some bulgar. But I can't for the life of me figure out labne. What is it? Anything new that I can do to my bulgar will make me happy.

Labne is yogurt (locally called laban) that has been condensed. This is what I think they may call yogurt "cheese" in the USA. To make it from yogurt you have to make sure there is nothing in the yogurt that causes it to solidify and not separate (liquid in our local yogurt separates from the thicker stuff once even a spoonful is removed).
I use the labne/condensed yogurt in the bulgur with garlic, cucumbers and carbanzo beans flavored with mint and garlic and salt then drizzle with olive oil OR use it in place of sour cream on baked potatoes OR have used it as a filling in omelettes OR have put it into jello OR...well...the list is almost endless and I find I have used it as a replacement for sour cream, cream cheese and other items from time to time.
That said...the last two days were NOT on program...suffice to say we stopped at Burger King on our return from Beirut yesterday and when I looked up the calories on what I had to eat...YIKES!
Today is a NEW DAY and one to stay on program!

Ha--I can't imagine Burger Kings in Lebanon, but I guess they're everywhere. Do you know if they have different menu items than in the U.S.?
So you mix the labine in with pilaf or put a little on top? Sounds wonderful. Wishing you a Burger-King-Free and core-happy day.

Been awhile...and though I haven't gained (much) I haven't lost as I had hoped to. Nightsinge-the labe is used in a variety of ways. When I use it with bulgur I usually just cook the bulgur with some salt added, add the labne, mint, garlic, cucumbers and garbanzo beans with or without some olive oil and eat it like that. Not really a pilaf. Today I ate: Breakfast: 1/4 cup oats in 1 cup nonfat yogurt with grated apple and 7 almonds Lunch: bulgur with a bit of salt and leftover chicken warmed while the bulgur cooked. toom (garlicky mayonnaise like sauce) 1/3 avocado 1/2 tomato glass of nonfat milk banana Dinner: potatoes and eggs wine Not a stellar day but I have had worse ones Cathy in Fih, Lebanon

Thank you for your words of symphathy. It was a rough week.
We have not met before. I have been with Kippys for a while but took a break. Living in the mid west your life seems so fasinating/adventurist. How did you end up there? When DH and I were on our Honeymoon we went to New Zealand. For many years after I dreamed of the opportunity to relocate there or somewhere other than the US.
