For us, it's YO-YO (You're On Your Own).
DW has a meeting, and we have an agreement that if I'm going to do all the cooking, she'll do all the cleanup. Since she hasn't done that, I deemed tonight yo-yo!

Well it is already tomorrow but I figured I would answer for tonight I am going to try the Shrimp and soba recipe from the turnaround cookbook and have a gigantic salad on the side.

Yo-Yo ...I like that! At my house we call in "FFY" fend for yourself! And tonight is FFY here also ... soup for me!

I have WI in the morning so I don't have a big dinner on Monday nights. Tonight I cooked some brown rice and mixed it with a veggie combo (broccoli, cauliflour, red peppers-frozen birdseye) put 1 tsp of olive oil, some balsamic vinegar and a couple shakes of Pampered Chef Italian Seasoning. Very yummy, very satisfying. I had about 1 cup of rice and a good portion of veggies. I have a feeling this could become a regular meal around here.

my usual monday night dinner when DH is teaching lawschool--nuked baked potato, topped with diced chicken, broccoli and 3 T fritolay queso (2WPA) and nuked again--delish!

Caribbean Pork with Sweet Potato. From the WW Turn Around Cook Book. This has become a family favorite. I substitute Granny Smith Apples for the Golden Delicious we like the extra tang they add. Also, I recently found a tube of grated fresh ginger in the refrigerated section of my local Asian market ;speeds up meal prep for so many dishes.
