If you like shredded meat , you will love this dish 2 lb. flank steak ( or any shreddable beef) 1 large onion - sliced 1 large green pepper - sliced and halved 1 large red pepper - sliced and halved 3-6 cloves of garlic minced 2-3 cans of tomatoe sauce 8 oz each salt to taste black pepper to taste 6 bay leaves 1 cup or more of red cooking wine to taste 1 can of red sweet pimentos ( i dont usually like pimentos but i tried it and loved it) In a large pot or pressure cooker, place the meat in and cover with water. if you wish to keep the stock afterwards, add a whole tomatoe, onion, peppers and garlic to water. if your going to throw it away just add s + p and some italian seasonings. Cook until meat is tender and can be pulled apart with a fork. I usually put it on in the morning in a crock pot and cook it for about 4 hours. If you want to keep the broth, strain it and it can be freezed. When meat is done, place on cutting board to cool. Tear into shreds with either your hands or two forks and put aside. - In a large pan saute onions, peppers, garlic in the olive oil for a few minutes. - Add shredded Beef and stir. Add the cooking wine, then tomatoe sauce and bay leaves, salt and pepper and cook 5- 10 minutes. (you can asdd a little bit of water is sauce is too thick) - Add the sweet red pimentos This is serves on top of white rice. (since i started the Core plan I of course changed it to brown) Let me know how you like it. It is my favorite dish

Tonight is a low-fat, core version of Ma-Po Tofu (a spicy chinese dish).
And I HIGHLY recommend the Tandoori Tofu from WPA menu thread. DF and I have been eating it all week. It's amazing and a great fix for Indian food cravings!

Well, I fixed my family WW mexican pizza. I didn't eat the tostadas and made it core. It was really good and family loved it too.
I love the yo-yo saying. Around here it is pot luck---if anything is in the pot you are lucky.

Grilled portobello mushroom cap Grilled chicken breast (with teriyaki and soy sauce) Grilled pineapple, onions, peppers Make it like a sandwich ! We just got a new stove top grill pan!! (Can ya tell? )

I am having chicken w. dijon mustard and dill sauce baked in tinfoil, with some veggies steamed, and either baked potaoe or some cousos. not sure on that yet
