I did the garlic-lime chicken from the crockpots section. It was good but the lime flavor was a tad overpowering. Maybe I used too much? Next time I'll try a little less.
That completes my food challenge this week!
Do I get a bonus for a fourth recipe? I did the mustard dill chickn from the WW site. That one was OK but a bit bland. I was surpised that I didn't taste the mustard more then I did.

Ok, I've done all three new food recipes to complete my challenge this week. Today I made an egg bake. I added extra vegies I fried in olive oil, layed lean ham on the bottom of a pie plate, then the vegies, then ff cheese, then poured the eggs over top. Baked for 35 minutes. YUMMY.
Can't wait to see what next week's challenges are.

Yay! I met this challenge too.
Last night I fixed the crockpot italian beef for sandwiches. Had some for lunch. Yummy. I used 2 points to put it on an english muffin from wild oats (like whole foods, but smaller); it seemed more like a roll than an english muffin.
As a bonus, I fixed the frittata recipe from the ww turnaround cookbook for supper tonight. Potatoes, artichoke hearts, eggs, yummy. I continue to be amazed at the things we can eat on core. Woo hoo, I may even hit a new record for recipes this week since tomorrow I'm planning to fix the spaghetti from turnaround cookbook.

Well, the February recipe challenge has helped me make it. I've tweaked old recipes and looked for new ones to post. If they're good, I'm posting them (which has helped me keep my food challenge and the bonus challenge). So far, everything has been good I figure I'll continue this through February, and then in March I'll start trying out some of the recipes others have posted here. Maybe this will keep me inspired to cook until it becomes a habit I hope

I'm doing the new-to-me fruits and veggies.
I stopped by Wild Oats on the way home from work. I found Star Fruit, plantains, and Chayote Squash.
Now I feel like a newbie on the WW WPA board shouting, "I've got <polenta or bulgur or couscous>, now what?" ;D

I need to find a new grocery store. I was going to try the "new fruit or vegetable" challenge, and couldn't find anything there that I hadn't had already, at least once.
It was cool, actually -- several of those things I hadn't eaten before I started Core, but now I guess I'll have to go farther afield. Or maybe I'll just try to find a completely different way to eat something I've already tried.

Well, I started out really well on last week's new-to-me fruits and veggies, but....the plantain is still sitting on the counter and the star fruit went bad before I remembered to eat it. (crying for the wasted maybe yummy fruit). I ate 1/3 so yay! I tried one new thing.

I'm monitoring my dairy intake this week, and doing well so far. I'm really enjoying it! I've been using skim milk to cook my hot cereal, having chai lattes, and some mocha milk (with WPAs counted) in the afternoon. I splurged and got milk from a local dairy this week to try as well. Loving getting back to the milk products....

This week I'll try to get my oil in. That is one of my biggest challenges. I'm afraid to use oil early in the day because I might need to use it later in the day and I don't want to count points for it. This challenge will help me figure out how to balance that out and maybe let go fo that "But I might need it later" fear.
