ok, well, so far today i've eaten a ff plain yogurt with berries added so..... ................... 1 but I packed in my lunchbox an apple, some carrot sticks and a pea soup that i made and froze. That cleans me out of produce, but I'm stopping at the grocery after work... Great challenges BlondieKate! Jeanne

I'm doing 3 new recipes.
I made the mexicups posted on this site. I made peanut-butter pudding from aimee's website I plan to make the garlic lime chicken from this site on Wednesday.
This one's too easy!

I'm trying for the 5-a-day. In the peak produce season, this one is usually pretty easy for me. This time of year I need to seek out new things, be creative, or be willing to pay the higher costs (but still, I'm not buying candy bars, so.... ).
Today I've had: blood orange, strawberries, banana, tomatoes, blackberries. As I look at this, I realize I'm a bit low on the veggies today....

yeah! more challengers! I'm doing 5-a-day. Today so far, apples in my oatmeal and spinach salad w. peppers and broccoli. Sitting on my desk is a navel orange and I have a ff plain yogurt w. fruit for snack later. oh, and I had an apple as a snack before (apples on sale last night...) So i guess I need a vegi or two for dinner...
Good luck and btw the mexicups are fabu! I had them last week, delish!

I doing 3 new recipes this week. This afternoon, I tried the Crock Pot Rotisserie Chicken. It turned out great--much better than Albertson's. Thanks, Kate. I didn't have the Lawry's seasoning, so I used Essence of Emeril (recipe is on the Food Network website).
I'm also trying a new recipe tonight: Cinnamon-Pineaple Pork. I'll post it if it turns out as good as it sounds.
***Update to the Cinnamon-Pineapple Pork... it's very tasty and quick. It has found a place in my favorites file, for sure. Find it on Dinner Forum.
**Update 2/2/05 Tried to modify the WW recipe for Macaroni & Cheese. I used whole wheat pasta shells and nonfat dairy items. it turned out pretty good, but I probably won't try to Core-ify it next time...just count a few points for reduced-fat cheese.
My three new recipes for the week are done and there are leftovers for DH while I'm working.
I could do this challenge every week. Rebe

I'm doing 5/day. Today I had a banana, watermelon (yumm), tomatoes, romaine, cucumbers. I also had avocado - does that count?

Day 2 of my 5-a-day: Orange, beets, apple, banana, Chick Fil A salad (that should be good for at least two - and yes, I took my WPA). May still add in some yogurt with fruit.
The recipes y'all have been trying look yummy!

You can use Kippy's suggestion for whipped topping (froth your own milk) and make hot fudge sauce with chocolate pudding or count another point for the toppings. It was pretty good, but the sugar-free chocolate sauce I used wasn't worth the point. Next time, I'll make my own hot fudge sauce or use the real thing. edit: Fixed a dumb typo.

I'm doing the 5/day challenge too, and I am honestly not having any problem at all. I am coming off a 2-1/2 year low carb diet, so I feel like I'm indulging by having fruit. I am loving it! I'm in my 4th week of Core and I really feel things starting to "click." I'm not buried in my materials as much as I was, so it must be getting more second nature to me.

5/day challenge update.... not so good yesterday. only had 4 an apple, big salad, chili w/ vegis, tomato sauce Today, doing better. had 1/2 banana, orange so far. in lunchbox are an apple, carrot sticks, and a salad. Planning to eat out, possibly fish with vegi and baked potato. Great work foodies! jeanne p.s. peanut butter pudding sounds fantastic! Is it posted here?
