You said you had a big salad. Correct me if I'm wrong, but there was probably more than one serving of veggies in your salad, right? Therefore, you did meet your quota!

I'm making some new foods. Last night I worked on learning how to poach an egg. Earlier in the week I made some turkey meatballs from a recipe I saw on one of the boards here. I guess I need to make one more new one. Good thing there are so many recipes here!

Thanks Gracie! I think I will count my salad as two especially since it had multiple kinds of vegis in it ;D Yesterday i was a vegi eating powerhouse! I got in 7 servings: 1/2 banana, mixed berries, spinach salad w. peppers and broccoli, orange, apple, baby carrots, and steamed carrots for dinner. Whew! Today starting off slower. Only had a few little bites of apple in my oatmeal and the mixed berries in my yogurt. Kate, how was the curry chicken? sounds good... Jeanne

I also want a report on the curry chicken!
Before work this morning, I made split pea soup and threw it in the crockpot. I can't wait to get home for a whiff and a taste! Even the kids (teenagers) say they coming home to the smell of dinner in the crockpot.

I'm so behind with my 3 new recipes. But it's only Thuursday.. Tonight I'm going to try the cheesecake pudding thing. With ffplain yogurt and ffsf white vanilla pudding. Sounds so good, I'll let you know.

Today I did two of my three recipes. 1) the cheesecake pudding. YUMMY. 2) Zucchini and corn bake. It was ok Now off to find my third recipe.

I'm working on my three recipes. Last night I made couscous pudding using banana cream flavor pudding. Yum. It was nice and filling. I didn't feel like eating three more when I was done. Tonight I made "Quinoa-Bulgur Wheat Pilaf". Also yum. I didn't have asparagus or artichoke hearts so I just substituted those with veggies I did have. I put the green beans in sooner than it said because they seem to take so long to cook at altitude. I also cut down on the oil so it was 1 tsp per serving. It works out pretty well for me to have leftovers with 1 tsp oil per serving; then I have 0, 1, or 2 of those in a day and make up the rest of the oil in my salad. Today I had 0 tsp oil in my salad so I was glad I had some avocado to put in. (I know I could use WPA for another tsp oil but didn't want it that bad.) OK...one recipe to go for the challenge. I guess that will be this weekend.

Did good on my 5-a-day today, and this was my 4th day to meet it. I plan to try to meet this goal for the rest of the days this week. My count: orange, tomato(soup), beets, grapes, banana, broccoli, sweet potato.
These challenges are a great idea. I love seeing what everyone else is eating, and reading the recipe reviews. Great job everyone!

Well, the curry chicken was good. Only recommendation, use half of the broth mixture and mix it up with ff sour cream. Otherwise, it's a bit runny.
