Rachel Ray Magazine!
2 lbs potatoes peeled and chopped Salt 2 lg eggs, lightly beaten 1/2 C finely chopped chives 1/2 C cornmeal One 10 oz box frozen corn, thawed 2 C FF cheese (any flavor) Pepper 1/4 C oil
Place potatoes in a pot of water, cover and salt. Bring to a boil, lower heat and simmer till tender, about 15 minutes. Drain, then mash potatoes in pot. Continue to cook and stir over medium low for 1 minute. Let cool for about 20 minutes. Stir together the eggs and chives. Place cornmeal in a shallow plate. Combine the potatoes with the corn, the cheese and egg mixture & season with pepper. Scoop 2 rounded tablespoons and roll into a ball. Set aside on a sheet of wax paper. Repeat with remaining mixture. (you should end up with around 30 balls)Flatten each ball into a 1/2 inch thick patty, coat in cornmeal. Heat oil and fry about 2 minutes on each side. Transfer to paper towel to drain and sprinkle with salt.
My idea: I am going to follow all of the steps until the "frying" in oil part. Instead I am going to spray a baking sheet and bake them in the oven at about 400 until crispy. I will will flip them at some point to crisp the other side. I don't see why this won't work and cut out the extra oil too. I will let let you know the details!!!!

Let me know because as RR says - this sounds delish! ;D I would bake rather than fry too, and cut down on the salt.
