Ok, I need a week-long challenge, and there aren't any posted since February! So I guess I have to start my own.
1. I challenge myself to post here every day, and read some of this board every day (I'm new to Core, this is day three for me).
2. I challenge myself to try a new recipe this week (and maybe learn what some of the unusual foods are that I never heard of that are in the core "grains" section).
I hope to expand on these goals every week...

I am new to the site, I haven't been able to make a ww meeting in a few months, but I am sticking with the core. IT is crunch time for me.. I am in for your challenge...

Hi Lauren,
Welcome to the challenge.
I had some major victories this weekend. I went out to dinner at a mexican restaraunt, and stuck to the plan! I had only about 5 chips (huge victory), and ordered an all-core meal. I went to McDonalds with my husband and had a really good salad (have to count points for the blue cheese and bacon bits, but they were worth it), and then went to a BUFFET (gasp!) and ate all core foods! I was actually surprised at how much there was for me to eat on the buffet.
I weighed myself this morning (i just couldn't help it, my weigh-in isn't until Wednesday afternoon) and am down nearly 4 pounds! I hope the ww scale is that good!
Off to the grocery store, in search of "new" stuff (like soy cheese).

I had quinoa for the first time this afternoon. It's pretty good, has a really neat texture. I put 2 tsp of extra virgin olive oil and some salt & pepper on it (I need to work on adding my oil too, just not part of my normal routine-normally I try to remove all the fats I can!)
I also bought some soy cheese today, and some couscous. Wild and crazy stuff!

New recipe for the day - quinoa, skim milk, cinnamon, nutmeg, splenda & sliced banana. Better than oatmeal!
I ate my salad (spinach, tomato and soy cheddar cheese) with balsamic vinegar and 2 tsp extra virgin olive oil for lunch. That's two days in a row with my "oils".
Weigh-in is tomorrow afternoon...wish me thin!

Ok Monday afternoon I rejoined and went to a meeting. After straight to Trader Joes. All core items for two days! Tonight I polenta pizza.. polenta roasted peppers corn sauteed onions ff mozz. delicous.. I think I love plenta Keep me posted on your delicous eats.. lauren

Its like corn meal you can make it or buy it made.. i bought it made, microwaved it added water and created dough.. it is great! and core!

Sounds interesting, I'll have to try the polenta sometime.
Down 5.2 at weigh-in tonight (yeah!)
I increased my exercise from 30 to 35 minutes on the elliptical machine at the gym. No "new" meals today, leftover quinoa and grilled steaks for dinner.

Good day and bad day...
Good: 30 minutes on the elliptical (after 5 minutes of fast walking on the treadmill waiting for an elliptical machine). Bad: punched in at 7:01 (1 min late), should have stopped after 25 min I guess.
Good: Wild Mushroom couscous (in a box from the Whole Foods Co-Op) with grilled ham, and tomato/basil/soy mozzarella salad topped with olive oil and balsamic vinegar (mmm mmm, fresh basil from my own garden, but it could be snowing before my tomatoes turn red) Bad: Chocolate at work (5 points total) AND a Dilly bar at Dairy Queen (5 points), that's 10 points used of my 35, and I have six days to go!
Good: Drank plenty of water Bad: I swear I spend half my day in the bathroom!
Friday is a new day.

Good: Weight lifting in morning, soent all day dancing at an outdoor festival.. Awesome music.. Bad: nothing core to eat @ mini cliff bars. 3 points (i guess) small burger no bun 5 points one delicious rum and diet coke 2 points I must have used some activity points dancing for 8 hours right.. still 15 flex points to go...reset monday I did weight myself a little early 2 lbs down.. maybe by wieght in I will be down 3 keep up the great work lauren
