I needed a new saute pan and visited Linen N' Things with my 20% coupon during a Calphalon sale - and ran into the new star of my kitchen, the Simply Calphalon 12" omelette pan. www.calphalon.com describes the Simply Calphalon line as "an ideal choice for cooking enthusiasts on a budget." Yes, it is still spendier than a Wearever from Walmart, but you get what you pay for. If you're preparing your own low fat meals in a Core kitchen, why not make the journey less stressful and more importantly - tastier??Even though it's categorized "omelette pan," I'm using it almost daily for mostly mixed fresh veggie sautes, browning chicken breasts, skillet Core chiles - oh yes, and for the Italian Potato & Artichoke Frittata from the Turnaround cookbook. They say you don't need oil but I prefer to use a bit of extra virgin olive oil (which we need, anyway). Raves: LIGHT (i.e., I can flip the stuff like on Food Network), easy clean-up, fast, even heating, comfortable oven safe handle that stays cool on the cooktop. And it's purty.

You were smart to invest in a good pan. I have a non-stick All-Clad pan that makes all the difference. I used to have Caphalon but DH ruined it by putting it in the dishwasher. Now I stick with stainless steel.

I absolutely agree that good quality cookware makes all the difference in the world. I had the good forture of needing to replace all my pots and pans last year after 22 years of heavy use, and bought a set of KitchenAid anodized finish cookware and added several additional pieces, like the grill pan, griddle and steamer insert for the stock pot. These pots and pans are fabulous! You need virtually no oil (especially now that Crisco and Mazola make alcohol-free cooking sprays--won't ruin the non-stick finish on your pans), and everything cooks evenly. I especially use the 12" chef's pan, 10" omelette pan and the grill pan a lot. The investment is well worth it.
