Does it really taste like provolone?
I know the cheddar tastes more like american, so am wondering how it compares in flavor.

I didn't like the provolone at all. However I love the mozarella and cheddar.

I was so excited to try veggie slices when I started Core...and discovered I don't like ANY of them. Tried 'em all, threw every single one out. Yucko. However, I am ok w/ FF cheese which not everyone goes for. Different strokes for different folks.

I don't eat the ones that come in plastic wrap, like kraft cheese does, but the bricks and shredded vege cheese is very good. I like the mozerrela the best for cooking. Trader Joes also has a nice brick of soy cheese, jalepano flavor. They all melt nicely.

My husband eats the provolone, likes it, and he's the fussiest eater on this planet. I'm so pleased to be sneaking Core cheese into his sandwiches..

I just got into these in the last month or so, thanks to these boards... you'd think in 14 years vegetarian I'd have tried them! LOL. I really love the provologne, like the pepperjack a lot, the cheddar is reasonable, the others were so-so. Worth trying a few to see what fits your own tastes.

My favorite soy cheese is Soysations three cheese shredded blend, available at Trader Joe's. I use it as my go-to cheese whenever I just need a taste of it -- in salads, over leftover baked potatoes for lunch, on melted tuna sandwiches, etc.

I have only tried a few brands of soy cheese, as unfortunately for me, many are not kosher certified.
I really like SoyaKaas blocks of cheese in cooking. Some varieties come FF and regular, though my understanding is that even regular soy cheese is core. (I hope that's right). The Jalepeno MexiKass adds a nice flavor to omlettes, grits or polenta and even a baked potato. Doesn't have a soy-taste and melts nicely. Haven't had it cold like in salads or as a sandwich, so can't say what it's like un-melted. They make slices as well, though for reasons I can't figure out only the blocks are kosher, not the slices.

Smart Beat Cheese slices are also good. It's not a soy cheese, but it is Fat free and core.
DH started eating them due to cholesterol issues, as an alternative to regular American slices in his sandwiches. (He's a thin guy who gets exercise riding his bike to work and eats a danish for breakfast a butter and cheese sandwich for lunch, and has at least one oversized bakery cookie with tea as a bedtime snack--good thing I love him or I'd hate him, IYKWIM). Now he's changed lunch to smart balance light margerine and Smart Beat cheese.
The smart beat slices are much better than Tofutti (soy cheese) slices in consistency and taste, IMHO. Comes in a few flavor varieties, though they all seem to taste the same to me.

Any soy cheese is Core. It doesn't have to be fat-free.
