I have a recipe that calls for nutritional yeast. I went to a local health food store to get some. They had a rather large jar of it and I didn't need all that much. They had a smaller jar of brewers yeast. I asked the clerk at the store what the difference was and she didn't think there was one. However one was more powdery (brewer's) and the other was more granular (nutritional). Also, I did some googling and they said that you can't use brewer's yeast because it's more bitter. However the folks at the store seemed to think that the taste was the same. Just the texture was different.
So now I'm confused. What is the difference between the two besides the texture? What are the different uses of the two?
The recipe that I have is for a vegan alfredo sauce - the yeast is supposed to add a cheesy flavor to it.

I use nutritional yeast flakes. It really makes foods taste rich. Brewer's yeast is not really the same thing at all and does not add a cheesy flavor. Nutritional yeast flakes may seem expensive but they will last practically forever...and I buy them in small amounts from the bulk bin at the co-op in my town. Anyway, the two really are not interchangeable, although I can't remember what brewer's yeast is for besides sprinkling on pet food... ![:)](//storage.proboards.com/forum/images/smiley/smiley.png) --Ally

I too have heard that they are the same thing. I use the brewer's yeast on my popcorn. It does add a sort of cheesy flavor. You should ask this question on the WW vegetarian board. I have used Nutritional Yeast (Brewer's Yeast---same thing, different name) for over 30 years.
Warning: Get it in bulk in a good natural foods store (not a health food store). Those that are canned or packaged in jars are OLD...
Nutritional Yeast should be BRIGHT YELLOW, not pale yellow or brown. If it is, it is rancid, has lost its nutritional value.
Nutritional Yeast is delicious, but you have to acquire a taste for it...start with a little...pretty soon you'll want more and more.
Our favorite is on popcorn... But we really like it on oatmeal and in gravies.
It is loaded with B Vitamins...actually I think that's what many supplements are made of. It'll make your pee yellow.
Oh, by the way...it is not on the CORE list...but it is very low in calories...I think it's 3 Tbsp. is 1 WPA.

According to Cook's Thesaurus, nutritional and brewer's are the same strain of organism, but are produced differently and have different flavors. Brewer's yeast is a by-product of beer making and tends to be slightly bitter. Nutritional yeast is grown on molasses and has a cheesey, nutty flavor. Both have protein and B vitamins. www.foodsubs.com/LeavenYeast.html I buy nutritional yeast at the bulk foods store and use on pasta, soups, and vegetables. It adds a nice flavor; guess you could call it cheesy or nutty.
