Haven't tried these yet but I want to.
Japanese-Flavored Edamame Ingredients 5 1/3 oz frozen edamame, shelled, about 1/3 of a 16 oz bag 1 1/2 tsp sea salt 1 tsp wasabi powder 1/2 tsp ground ginger
Instructions Place a small saucepan filled with water over high heat. Add edamame to pan and bring to a boil; boil for 3 minutes and drain. Place edamame in a serving bowl and set aside. (Or cook a 16 ounce bag of edamame in a medium saucepan and make the Mexican and Indian varieties as well.) To make seasoning, mix together sea salt, wasabi powder and ground ginger in a cup; toss with edamame until well-coated. Yields about 1/3 cup per serving.
Indian-Flavored Edamame 5 1/3 oz frozen edamame, shelled, about 1/3 of a 16 oz bag 2 tsp curry powder 1 1/2 tsp sea salt 1/2 tsp ground coriander 1/8 tsp ground cinnamon 1/8 tsp cayenne pepper
Mexican-Flavored Edamame 5 1/3 oz frozen edamame, shelled, about 1/3 of a 16 oz bag 1 1/2 tsp sea salt 1 1/2 tsp chili powder 1/2 tsp ground cumin 1/8 tsp cayenne pepper
Core Edamame Hummus 2 cups shelled Edamame 1 tsp olive oil 2 garlic cloves 1/2 tsp salt (or to taste) 2 tsp fresh-grated ginger, curry powder or cumin to taste 2 TB fresh-squeezed lemon juice
Mix all together, mash and enjoy!

SUPA big huge hugs of thanks! I'ma be an edamame fool! ;D ;D ;D
PS--do you have to nuke the edamame to get them out of their shells and then boil? Or do you boil then shell them?
PPS --you're still gonna post the roasted version, right?

Night - I nuked the edamame, which cooked it, didn't need to boil afterwards. Then I let cool and popped them out of their shells into a bowl (have to admit I didn't let them cool long enough and burned some of my fingers!). Then mixed them with the seasonings of my choice and put right on a baking sheet into the oven to roast.
