They were sampling dried shitake mushrooms at costco this weekend. I gotta tell you, I don't usually like mushrooms of any kind, but these were GREAT! So good, I actually bought a bag and have been eating them almost every day. Here's the recipe I recreated based on what the woman in the store did (I don't measure, so I apologize if you're the type of person who needs numbers to cook, but my recipes don't use them):
1. Reconstitute them in warm water for approx. 20 minutes (take whatever amount you want to use, and put in enough warm water to cover them). 2. Then over a wok or frying pan, heat a little bit of olive oil. If you have chili oil and like things spicy, add a drop to the olive oil (this adds a great flavor, and uses a small enough amount to not add any WPA's). My mom uses a chili oil paste she bought at the asian markey, but I just bought a "mongolian fire oil" at Albertson's that worked really well, too. 3. Add some minced garlic to the oil and allow to sizzle a bit. 4. Add the mushrooms to the oil and stir fry up until cooked. You can salt to taste
That's it - enjoy!
I've had them plain like this, and also have added some sugar snap peas to the mix (I bought a bag of those at Costco, too) and really like that combo! For dinner last night, once the snap peas & shrooms were cooked, I added a serving of bulgur (already cooked) to the mixture and stir fried it all together. Then, I scrambeled an egg into it. It was an odd combination - something I wouldn't usually do, but it worked and tasted great!!!

I bought a big bag of these at Costco recently too - LOVE THEM.
I also reconstitute like you said and reserve the liquid to cook a grain (brown rice, cous cous, barley, etc) then add the mushrooms, carmelized onions, and any veggies I have on hand - YUMMY!
Very rich mushroom flavor.
