2 1/2 c boiling water or veg. broth 1 c uncooked bulgar One 10-oz. pkg. frozen spinach 1 T olive oil 1 medium onion, chopped 2 cloves garlic, minced 1 t dried oregano 1 t grated lemon peel 1/4 t ground nutmeg 3-oz. RF feta, crumbled (about 3/4 cup) 2 medium tomatoes, cut in wedges (I took out seeds) In a small mixing bowl, combine bulgar and boiling water. Set aside for 20 minutes. Cook spinach according to directions, drain well. Heat oil in skillet over medium heat. Add onion and garlic, cook til onion is tender, about 5 mins. Stir in spinach, oregano, lemon peel, and nutmeg. Salt & pepper to taste. Drain bulgar and fluff with fork. Stir bulgar into spinach mixture, mix well. Stir in feta. Garnish with tomatoes.
