NQR Taco salad
A bunch of torn up greens topped with: diced onion, sliced red pepper, diced cucumber, chopped avocado, salsa, ff sour cream and:
a blob of refried beans mixed with an equal amount of whole kernel corn and a dash of taco seasoning mix for some spice and flavor. heat that up and put it on top of everything else, a little swirl of taco sauce on top for an extra boost of flavor.
Top with ff cheddar if so desired.
SO filling, and kicks that mexican craving right to the curb!
Ooh, and I just realized you could toss some polenta medallions on there for some grain and more flavor. Wish I thought of that last night!

Couscous & Cheese 1/2 c. uncooked whole wheat couscous 1/3 c. water 1/3 c. nf milk 3 slices cheddar soy cheese (Galaxy Foods Veggie Slices)
Put first 3 ingts in a medium microwaveable bowl. Shred the soy cheese and add to the bowl. Microwave on 75% power for 3.5 minutes. Let sit for 1 minute before enjoying.
Serves 1 for main dish or 2 for side dish.

I bet everyone else has already thought of this, but just in case. . . here goes.
Take a bowl of Garden Veggie soup (the WW recipe, or any other vegetable soup recipe you like). Add 1/4 c. uncooked couscous. Zap in microwave for 3 minutes (4 if the soup was cold). Shazam, instant "bulk" for your soup.
When I do this, it comes out thicker than soup, so it's almost like an instant casserole. Top with some shredded soy cheese, and it's really filling and good.
