Roasted Garlic Potato Leek Soup
from kraftfoods.com Makes: 8 servings, 1 cup each
1/2 cup prepared KRAFT Roasted Garlic Vinaigrette Dressing, divided (to make recipe completely core, look for a ff version)
4 large leeks (about 2 lb.), cut into 1/4-inch-thick slices
4 large russet potatoes, peeled, cubed (about 4 cups)
1-1/4 qt. (5 cups) water
1 tsp. salt
1/2 tsp. pepper
1 cup milk
1/4 cup chopped fresh chives
HEAT 1/4 cup of the dressing in large stockpot on medium heat. Add leeks; cook 5 minutes or until tender, stirring occasionally. Add potatoes, water, salt and pepper; cover. Bring to boil. Reduce heat to medium-low; simmer 15 to 20 minutes or until potatoes are tender. Cool 10 minutes.
ADD leek mixture, in batches, to blender container; cover. Blend until pureed. Return to stockpot.
STIR in milk and remaining 1/4 cup dressing; cook on medium heat until heated through, stirring frequently. Sprinkle with chives just before serving.

Roasted Leek Frittata RecipeView.com Yield: 4 Servings
2 Large Leeks in 1/4-inch rounds, Sliced 16 Oz Liquid egg substitute, or 6 -large eggs 1 Tbl orange zest, Grated 6 Tbl Nonfat ricotta 2 Tsp canola oil or Cooking spray 1/2 Tsp Salt, or to taste
Makes 4 servings
A treat for weekend brunch, this Spanish-style omelet also makes a comforting late night dinner. Use only the colored parts of the orange peel, and be sure to wash the leeks thoroughly in several changes of water-they can be very gritty!
1. Preheat oven to 425 F. In a large bowl, toss leeks and zest with oil. Spread in one layer on a nonstick cookie sheet and sprinkle with salt. Roast 12 minutes, stirring halfway through.
2. In a large mixing bowl, combine egg substitute, or eggs, with ricotta and whisk until smooth. When leeks are browned and tender, stir them into egg mixture.
3. Lightly spray or brush a large nonstick skillet with oil. Heat over medium-high heat until smoking. Pour in egg mixture, reduce heat to medium, and cover. (Use a cookie sheet if your skillet doesn't have a lid). Bake frittata on top of the stove for 15 to 20 minutes, or until top is set.
