Mixed Vegetables 1 1/2 C celery 2C carrots 1/2C cliced onion 3/4 C green beans drained 2C canned tomatoes 21/2 tsp salt 1-2 T sugar 3T minute tapioca 4T butter Cook celery and carrots till tender. Mix all the ingredients together and put into a 9x13 pan. Bake 1 hour at 325 degrees stirring once or twice. Ok so to make it core I can substitute splenda for the sugar, and olive oil for the butter. But I don't know how to count for the tapioca. This recipe serves 8 to 10. This is an awesome recipe to have with ham, or turkey. It has been a part of our Thanksgiving meal many times. thanks for your help. Katie
