Can anyone help me with the difference between white and yellow cornmeal? Can they be used interchangeably? If not, what do you use white cornmeal for? TIA

Yes, you sure can use them interchangeably.
I think they're just ground from two different colors of corn. And which you use may just be regional preference -- they use white more in the South and yellow more in the North, I think. Or maybe I have it backwards.

I have used only yellow. Is there a difference in flavor where one would be better tasting or better texture then the other? Thanks
