OH MY are they good, but I'm looking for something different. I know my FIL uses a rice wine (I think). It makes them taste sweet...so I'm sure it's not core..LOL! Any help would be wonderful. I'm new to the boards & core, and I'm looking for things to stock up on. Coming up with a list of quick and easy things hasn't been easy. Hi Amy,
I marinate them in FF Italian dressing, then grill or Pam fry. Delicious that way.
Also read that someone used portabellos as the base for a pizza. Here's the recipe for that.
Portabella Pizza
One of the most dramatic ways to take advantage of the size and meatiness of a Portabella cap is to substitute it for a pizza crust. And it's much quicker and easier to make a portabella pizza than a regular one. Smaller caps, found in 6-ounce packages in grocery stores, are fine for making these miniature pizzas. If they measure 4 inches or less, you don't have to prebake them. Very large caps, however, need to be baked for about 5 minutes in a 350ºF or a microwave at the highest setting for 1 minute oven before you proceed with the toppings. Use any of your favorite pizza toppings - pepperoni, sausage, onions, peppers, and so forth. (Most people prefer to eat this pizza with a knife and fork.)
* 1 6-ounce package Portabella caps, or 4 whole Portabella caps * A little oil, for brushing * ½ cup tomato sauce * 5 ounces mozzarella or any other good melting cheese Preheat the oven top 350°F.<br>Wipe the caps clean of any dirt and brush lightly with oil. Place them on a baking dish, gill side up. Cover generously with the sauce, then top with the cheese. Place in the oven and bake for 6-8 minutes, or until the cheese is well melted. Serve immediately. (Most people prefer to eat this pizza with a knife and fork) I made the following recipe using low fat shredded cheese, onions and peppers. It was soooo good-next time I'm going to try using some Boca Sausage crumbled on top, too!

I also use the ff italian dressing, grill w/sliced tomatoes or ff cheese. Love the Portabella Mushrooms. Didn't realize how good they were until I had one in Gatlinburg, TN couple of years ago.
