I have always taken such joy and pleasure in food. In preparing it in reading about it and of course eating it.
I don't want to lose that I could not stay on a plan that took that away from me. Fortunately on core I am able to fix and eat wonderful foods plus I have the added challenge of adapting foods to fit my food plan.
So my journal is dedicated to joy. The joy of cooking, joy of eating and just plain increasing Joy of Life

what a fantastic attitude. You will succeed when you have an attitude like that. I feel that core has been the most freeing food experience I have ever had. I have tried many new foods and recipes, and have never felt like I was on a diet. Good luck!!!!!

Thanks Kate, It looks like you have had great success, congratulations. I love core.
One of my favorite meals to eat as a kid was when we would have a sampling of cold cuts. devilled eggs, cheese and crackers, pickles, dips etc.
It was a Sunday night thing so this Sunday I have a plan. Devilled eggs, california dip made with ff sour cream and onion soup mix, with carrots and celery canadian bacon, pickles, and olives.
For me I find that if I can find core (or low point) ways of keeping the experience of certain foods I don't miss high calorie eatings.

Tonight for Dinner I modified one of my daughter's old time favorites
Core Cheeseburger Macaroni
1 half box whole Wheat macaroni 1 lb extra lean ground beef 5 slices ff kraft singles dash Tabasco sauce 1 Tb ls A1 steak sauce Tony Chacheres season salt to taste chopped onions 4 tsp olive oil
brown ground beef in olive oil, add Tony's, onions, Tabasco and steak sauce.
Cook Macaroni. When cooked drain and add meat mixture then the cheese and stir until cheese melts.
makes at least 3-4 servings
Take a bite then exclaim "AND IT'S CORE"
I also had edamame and a green salad and a weight watchers fudge ice cream bar.

I am so glad it is Friday I can't see straight. This week has felt like it was 21 days long! I am short staffed at I need to hire 2 OTRs and 1 PT. Our hospital is a wonderful place to work but unfortunately our salaries are not competitive. It makes hiring good people hard. Once we get them they tend to stay because as I say it is a great place to work but when you offer several dollars/hour less than they could be making elsewhere getting staffed up is hard.
So I have been dreaming about work at night and it makes me feel like I am working 24/7. Bleh. SO what am I going to do about it.
Well first and foremost I am trying to hire, but I have decided that I need something fun to take my mind off of work a bit more.
This summer I took a cake decorating class (yes while on WW. Frosting doesn't tempt me so it was fine) and I really enjoyed it. I love to take classes.
In my life since college I have taken classes in belly dancing, Aikido, sign language, cake decorating, Salsa Dancing, Ballet, Pottery,sculling and probably a few more that I have forgotten
I think it is time to take another class...something fun. Hmmn What shall it be. UT offers informal not for credit classes in tons of fun stuff.
WW area to address.....I need to get better about getting all my fruits and veggies in EVERY day

This morning for breakfast I am having Breakfast potatos
Shred 2 potatos, half a zucchini, 3 green onions(chooped fine instead of shredded) Season with season salt ( i use Tony Chachere)
cook in a skillet sprayed with non-stick. when almost done lift and pour in 2 tsp olive oil so they get a nice crisp layer.
Yum.
Breakfast - Breakfast potatos, Coffee with s/ carmel syrup and skim milk banana
Snack - 2 point granola bar
Lunch - Cilantro Chicken Bites (recipe below), edamame, Tangerine Diet Rite soda
Snack - Celery and onion dip(ff sour cream and onion soup mix)
Dinner - chicken with Quinoa
Dessert - SF/ FF chocolate pudding with frozen cherries and light cool whip
I modified this from a recipe in Gourmet Cooking mag 9(may 2005)and it is OMG delish they rolled the balls in corn starch and fried them I omitted the corn starch, added a tiny bit of raw oatmeal because it was soo soft and baked them
Here goes
1 lb ground chicken breast 1 egg 1 cup cilantro chopped 2-3 scallions finely chopped 2 teaspoons sesame oil 1 tsp salt
Mix all together form into hor doeurve sized balls and bake til done They were very soft so I added a small hand full of oatmeal
Dipping sauce (mix all together)
1/4 cup soy sauce 1/4 cup rice vinegar 2 teasp sesame oil chopped cilantro

Today in my quest for bringing more fun to my life here is what I did.....
1) Made a necklace and earings
2) tried a new recipe (chicken cilantro bites)
3) hauled out my sewing machine and did some sewing (ok so it was mending instead of something creative it is a start)
4) watched an excellent movie 28 days
5) read an excellent book Family Tree by Sherri Tepper

Hey there,
Thanks for visiting! Hope you're having a good week.
The spaghetti was ok - bland. I guess part of it is that I was expecting it to be more creamy (it's not at all) and more spicy (I like things on the hot side). I'm not sure how to "fix" it. I'm not an intuitive cook; so, it's really hard for me to know how to modify a recipie to make it the way I like.
Do you like EW mag? I'm debating subscribing. I might have to try a few other of the recipies to decide.

Today was WI I was up by a pound. Blech
I need to count all the little things.
Breakfast- Baked oatmeal, skim latte, grapes
Lunch- Salad, Mexican chicken and tomato soup
Snack- 1 pt Mini Heath
Dinner- Pot roast, carrots , edamame salad
Dessert- SF/FF chocolate pudding over SF cherry jello with FF cool whip (black forest jello parfait)
1 pt gummy bears
I will pull some chicken out tonight to thaw for tomorrow's dinner, but I haven't yet figured out how to fix it.

Yesterday I was too tired to post so here is my yesterday eating (not so good, I gave blood and they don't let you leave until you have had one of their snacks)
Breakfast Non Fat Latte, baked oatmeal, Grapes
Snack 1 cp Orange Juice, 3 points of peanut butter crackers and 3 points of cheese crackers
Lunch Turkey Sandwich 1 point for bread 1 point for low fat chips
Dinner Left over pot roast and carrots
Points used 10

The weekends fly by so fast. I am not even going to count up my points for today because my DD and I went out for Dim Sum. Everything else I ate today was core though! ;D................and I wonder why I seem to be on a plateau LOL Oh well nothing we got was fried, and it was still a smaller binge than what I would have done if I were not on WW.
I didn't try any new exciting recipes this weekend.
But I did get a milk frother, and a new dishwasher (mine has been broken for about 6 months)
I have to figure out this frother thing because every time I start to froth even a tiny bit of milk it starts overflowing the glass then I pour half out and then it un froths while I am frothing one part of it. I also notice that it doesn't froth as well if I have coco powder in it first. I would like to get to where I can froth something to the consistency of whipped creme. I think I will ask for tips on one of the boards.

I walked into a big mess this morning at work. Apparently the weekend scheduling on my Ortho unit was less than wonderful. So we had 2 patient complaints, and 1 therapist complaint. Then I had my ortho PT call in sick, so it was a mad scramble to get it all covered. We did get it all covered and addressed the patient complaints so they were happy. Tomorrow I will deal with the PT complaint.
Good news on the work front,I have hired a couple od OTRs so I will be at full staff once they start. Woo Hoo!!!
B- Baked oatmeal made with pineapple, coffee with skim milk
L- pork chop, turnip greens, corn water
D- fried rice made with Brown rice, 94% ff ground beef, onions celery, green beans, soy sauce, and sesame oil mineral water
no snacks or dessert yet.

weigh in was today. Up another .8 pounds. I kinda knew it because a skirt i could wear 2 weeks ago was snug again.
This week I will try to stay more firmly OP.
B- 2 pt WW bar and baked oatmeal (has 1 serving of fruit /slice) latte with skim milk
L- meat loaf and green beans French onion soup ( 1 veg)
s- 2 pt ww bar
s- celery and onion soup dip ( 2 stalks is that a whole veg serving)
D- chicken breast cooked with tomatillo sauce and dollop of yogurt cucumber
dessert- WW smoothie
3 f/v
2 milks need more water!!! need more Fruits and veggies
