Ooh, Kally, lamb soup with lima beans and squash? Post the recipe, would 'ya? It sounds yummy, and I have a lamb bone (from a roast leg of lamb) in the fridge waiting for a creative use!

lamb soup This is all I do. Put the bone or a small chunk of lamb in some water with a bit of onion and carrot and simmer for ages, maybe 2 hours and top up with water as required. Take the stuff out and put broth in fridge so that fat congeals on top and take it off. Cut up meaty bits and throw back in with broth and add a bit more water, add cooked white beans and hunks of squash (any kind) and cook. Season with salt and pepper. Pretty easy, huh? Your place will smell all delicous and lamby

I'm still grinding away at it. Slow but steady. Anyhow, I am learning so much, how to eat real food, how to cook vegetarian, how to mindfully eat and cook. It is all worth it.
Two days on the road wtih work is hard, but I just do my best. I think I eand up eating a LOT less than I normally do and it is all to develop lifetime habits, so it is worth it.
Last night I didn't eat after dinner. I was thinking of a snack to eat, but just couldn't be bothered, so I went to bed instead. That is such a smart strategy, I should use it more often.
B- steel cut oats and milk S - strawberries L - pea soup and avocado and polenta S - popcorn or something snappy D - oven fries, assorted veg, maybe an egg S - puddingy something or rather
To infinity and beyond.

Today I was at a seminar all day and my head is swimming with ideas. Here is the menu de jour.
B - shredded wheat and milk S - assorted fruit plate at seminar L - bean soup (bought at restaurant but it looked core enough for me) 1 piece of bread ()2.5 pts) S - a few bites of fruit D - miso soup, California roll (4 pts), DQ kiddie cone (3 pts)
Lazy slack ass kind of can't get my ass off the couch evening so no extra points earned today.
so I better take 9 pts. for the day. I think that leaves me with about 8 for tomorrow, but I don't plan to use any tomorrow.
Cream of Wheat pudding recipe
musikmamma posted this on page 3 of breakfast. THis stuff if fabulous.
Cream of Wheat Pudding
1 cup skim milk 3 tbsp cream of wheat (quick cooking 3 minute) 1 egg splash of Vanilla 1tbps Splenda (from the box)
1. Spray small saucepan with cooking spray, add milk and heat until just about boiling. Becareful as it will burn and stick to the bottom of the pan. 2. Add cream of wheat and stir with a whisk for about 2 minutes. 3. In a small separate bowl combine egg, vanilla, and splenda. 4. Add egg mixture to the cream of wheat and cook for 1 minute longer or until thickend to your liking, and long enough for the egg to cook.
Can be served hot or cold, I prefer it hot, and as a breakfast or desert. Sometimes in the evenings if I have a craving for something sweet I make this, as it is quick and easy!
Enjoy!

oh man add a oatmeal raisin cookie to the mix for Sunday. I was making them for dh and his lunch and had one with coffee, then checked for the points - like 4. Yikes. I walked for an hour today, so it should be okay, but all that work for one little cookie - so not worth it.

Yesterday I was working away from home. I ordered a spinach salad with dressing on the side and a side order of salmon. It was wonderful. Here is the good part. There was a lovely sliced egg on top.
I was amazed at the way they had cooked the egg, the white was creamy and lovely. I commented a few times to my colleague. Finally she looked at my egg and said, "Oh that's not egg, that's bocconini (that cheese thing). No wonder it tasted so great." lol Anyhow I have no idea how many pts this cheese is, so I just estimated. It was a lovely egg though.

Kally - thanks for the cream of wheat pudding. All your food sounds so good. Can I just hang out in your kitchen?
How were the wheat berries with boychoy and chicken? I'm guessing you stir-fried the bokchoy and chicken then put them on top of the wheat berries?
I made a nice Thai scallop dish yesterday - might have taken it from this board but I added lots of spice - some thai green curry paste and garlic chili sauce, and put it over ww angel hair pasta.
I froze the rest of the lite coconut milk in an ice cube tray and might make some Thai Iced Tea this summer.
Nice chattin' with ya, Melanie
