Found out better news about my mom...the surgeon said she will have chemo for 4 months and then he will give her a masectomy. He was MAD that they have wasted 3 weeks with her...which I thought too, wish I had said something. Oh well, all in the Lord's timing. I made some Tamale Pie and it turned out very good. I'll post the recipe...I adapted it from one in the Good Housekeeping Cookbook. So now I have another good and easy CORE recipe...and my husband and son loved it too.How I did on MIND OVER PLATTER yesterday:1) Sitting down to a table that is set ---B+ 2) waiting 15 minutes when "hungry"---B+ 3) deep breathing before eating (and saying grace)---B+ 4) serving attractive smaller portions---A 5) allowing one light snack for evenings and that's it!--B+ How I did with THE 8 GREAT HEALTH GUIDELINES:1) 5 Servings Fruits & Veggies---A 2) Whole Grain Foods---A 3) 3 Dairy Servings (or dairy substitute)---A 4) 2 Tsp. Glad to hear things are moving (finally) with your mom. Can't wait to see the recipe for the tamale pie! I love Mexican and TexMex food. Must be from my 2 1/2 year stint in Texas a few years ago!

Hi Debbie! I just remembered about the Tamale Pie! So here it is (by popular request)...by the way it was easy...did I say EASY? Way easy.. I love big one pot dinners that will have leftovers.
Another good thing I learned from my Mom...get all the veggies, protein, and bread into one pot...less dishes. I often double the recipes for huge pans and take them to potlucks or for our family Sunday dinners or birthday parties (many grandchildren). TAMALE PIECombine in a medium saucepan:1 c. yellow corn meal 2 1/2 c. cold water with added chicken boullion ....... (I use Tone's chicken boullion paste)Cook until slightly thickened and spread in a 9 X 13-inch baking pan, sprayed with no-stick cooking spray. Set aside. ......................................... In a large skillet brown:1 lb. lean ground beef 1 med. onion, chopped 1 lg. green pepper, chopped 4 tsp. olive oil (or other oil), to brown Add:1 Tbsp. sugar 2-3 tsp. Chili powder--to taste 2 cloves garlic, chopped 1 tsp. salt Dash pepper Then Add:1 (6 oz.) can tomato paste 1 (10 oz.) can Ro-Tel 1 (16 oz.) can whole kernel corn (with juice) Optional:[/i] Add 1 (16 oz.)can cut green beans (with juice) and/or 1 (16 oz.) can black beans or bed beans--do not drain.) If you do this...add more chili powder & garlic. ........................ Spread over the cornbread mixture and top with shredded Soy cheese (or ff cheese) and dot with a can of pitted black olives (optional--for festive parties). Bake for 20-25 minutes at 350 degrees.

[glow=red,2,300][/glow]I'm feeling stronger about CORE, not eating as much or as often. I DECIDED to have a Boca pizza last night. I had bought it for a treat meal and my husband wanted a Sonic Hot Dog, so I made the pizza. I had plenty of WPAs to have it. I also had a Sonic diet Cherry Limeade which has some sugar in it. I really thought about how I felt afterwards...the deep breathing and all. It was nice...not a trigger. Hi Sandy,
Thank you so much for your note on my journal page. It is so nice to have the cameradery in this process of figuring out how to be core-ish and successful and fit it into our lives!
I looked at a few of your entries just now and it seems like you sure have a lot on your plate (pardon the food reference!) with your mom and yet your are committing still to your efforts with core. BRAVA. It's like the more you have of yourself--the more you can give to her.
I also really like the categories that you have in your daily journal...the meals, the healthy guidelines and even the mindful eating stuff. I may adopt some of that template for myself.

Sulee, I'm so glad you stopped by, I sure appreciate the encouragement and moral support. You know, I got a Cancer Survivor's Diet for my mother, and it is basically CORE, or close to it....everything is fresh, raw, organic as possible, not fried, etc. So I believe the Lord was really preparing me this month to be able to help my mother.
One of my nieces has been watching her weight for many years (she's 26)...she came over yesterday and helped my mother, brought her fresh squeezed organic juice, and made her a tuna and sprouts sandwich.
I would be so happy and honored if you want to use the format I have devised for myself. It has taken some trial and error. I thought I could get by with not posting some of the things (like taking my vitamins--I've done it for 30 years) but, you know, if I'm not writing it down I start slacking.
I have not lost weight as fast as the others, but right now getting this thing down pat is more important to me. I hope I am not in denial about the losing weight.
I think you could copy and paste to your own Journal. I'll be checking back with you again. I'll still be here when I travel to Oregon....no way am I going to go off of CORE now. ...... Sandy

I had a bit of cold blueberry oatmeal left over last night and had it for my snack...it was way better cold than hot. I add a dusting of nutmeg and cinnamon. ...and of course, SILK.

My husband is gone for his yearly check-up overnight...so I have one whole glorious day of solitude! .... Well, so much for solitude...I had a hard time today. I had some upset with my mom, trying to get her some appointments scheduled, working with relatives...long distance. When I finished I felt like grazing the whole day...I made some CORE baked spaghetti and some blueberry oatmeal. I felt way too stuffed, but I stayed with CORE foods...so did not suffer too much damage. I still didn't lose weight, although my clothes are fitting better and everyone says I look thinner.
I'm thinking this morning that maybe I do need to attend live meetings...we'll see if I can arrange it while on this trip to help my mother. Sandy--I think you're doing quite well in the face of adversity. It isn't easy when the rest of life is smooth, so don't beat yourself up--be happy that you stuck to Core foods and try to tune in a little better to your fullness scale. I hate it when I'm overstuffed--even on good stuff. Keep up the good work. If others think you look thinner you must be--and that's a real motivator!

"I know I should eat more vegetables, etc." Finally I just had a small bowl of leftover oatmeal and later on a slice of ww bread to soak up my 2 tsp. of oil.
You know what...I feel great this morning! I feel thinner, lighter. I think I just had a mindset that I should eat dinner...maybe I should make "dinner" at noon, like I did yesterday. Then something light in the evening. Anybody else have these thoughts?

My mother will start chemo-therapy after I get there this week. She had CT Scan and Bone Scan yesterday. The results show she also has liver cancer...she is given 2-4 years left.
The doctor was very happy that she is taking Shaklee vitamins and we have found some other treatments...4 way Herb Tea (detoxifying), for one, and Artimesinin (Chinese Medicine). She has started on them. Mom is doing great...and so am I. I cried pretty hard. How it went: Moving around more each day (cleaning house)...my portions are half of what they were!
I made Chicken Fajitas with whole wheat tortillas this evening. They turned out delicious....and easy.
I had only used 6 weekly points for the whole week so I made a treat for the evening, added a Tbsp. of sf ff white chocolate pudding mix to a glass of SILK and then 1/4 c. marshmallows & a cinnamon graham cracker.
It tasted very good, but I think I'll try to find something better than that pudding mix with the splenda (although it sure tastes good.)
