I find myself making this whenever the weather turns cooler. It makes the house smell divine and is really a great thing to have after work. And on weekends, i make a big batch in the morning and drink it all day. it really is pretty effortless once you have the ingredients on hand.
put 2-3 cups of water in a sauce pan, turn on the heat...
throw in a cinnamon stick or two; 3-4 cardamom pods; 1/2-1 inch of fresh ginger, cut into a few slices; a grating of fresh nutmeg (or a few finger pinches); a couple of whole peppercorns if you really want to warm up. with time you'll decide what things you may like more or less of.
bring to a boil and then let the whole thing just simmer for about 10-15 minutes.
(If you want) add a good handful of loose tea I get organic black tea at the store, buying which ever one's on sale. You don't HAVE to add the tea, this stuff is delicious with just the spices, too. and you could certainly opt for decaf tea, as well.
Let the concoction boil for about 3-4 minutes with the tea.
Add about an equal amount of skim milk -- or however much you like -- and let the chai return to a boil.
Strain and enjoy.
If you add sweetener, wait till you've decanted the chai into your cup. I've heard that boiling some sweeteners, especially honey, isn't a good idea. (it increases ama, according to ayurveda).
This stuff is utterly core, (unless you add a non-core sweetener) It's a great way to get some milk in and it's so yummy. i'm drinking it now!
