I found this on the WW boards, maybe change the bread crumbs to corn meal for a totally core product? And if you try this, mabybe dip them in some kind of core sauce (instead of ketchup)?
just had one of my faves...baked portobello fries..cut up a portobello into strips..toss in 1/4 cup of eggbeaters and then dredge in 1/2 cup of breadcrumbs...bake on 400 for 5 minutes then flip them and bake another 5..only 3 points (flex)! You will find that after you have prepared them there is still half of the eggbeaters and 1/2 of the breadcrumbs left..so don't count those points!!!

That sounds delicious! And the really good news is that ketchup *is* Core, so you can even dip them in ketchup. Harvey's Ketchup - whatever that is - isn't Core, but "ketchup" is listed as a Core food in the online guide.
