Reading Wildflower's polenta-frittata thing in her journal reminded me of this veggie puff thing I used to make to use up leftover vegetables. I stopped making it for some reason, but now that I've been reminded of it, I'm going to start again.
We used to have have a weekly organic fruit and veggie delivery. Sometimes I ended up with a backlog of vegetables I needed to get rid of quickly. This is how I did it.
Chop up your veggies and microwave or saute them to soften, if they’re hard like broccoli, carrots, or onions. Mix the veggies with a few eggs, however many it takes to generously cover the vegetables. For 3 heads of broccoli, I use 6 eggs. Add salt and pepper to taste, and shredded FF cheese. Whatever kind goes best with your vegetables.
Pour everything into a casserole dish sprayed with cooking spray and bake at 400 for about 45 minutes, or until a knife inserted into the center comes out clean.
This is definitely one of those wing it recipes. My husband calls things like this “Kim Surprise” because the outcome is always a surprise.
