Here in Austin you can buy canned Salsa Verde, AKA green sauce.
They have Tomatillos, jalapenos, and spices. They are a great enchilada sauce for chicken enchilada Verde or
It is great just poured over chicken breast and baked. Right before serving I add a dollop of yogurt or FF sour cream. Delish! You could also melt a bit of FF cheese on top and/or add chopped fresh cilantro and it would probably be even better.
Side dish of a cucumber/tomato/onion/cilantro with lime juice salad. Or corn with green chilies and you have a south of the border meal that is core.

Since I'm allegic to tomatoes, I eat a lot of tomatillo salsa. For a quick lunch, I mix canned black beans & frozen corn, tomatillo salsa, and a little cilantro, and nuke it.
I also make huevos rancheros by smearing ff refried beans on polenta slices, topped with a fried or poached egg, topped with tomatillo salsa. Mmm.
Like you, I use it for enchiladas verde. And you can make an easy chili verde in the Crockpot with pork loin chunks cooked in tomatillo salsa.
