I posted this on the WW board and thought you may all like to see it here.
I just have to share with you my wonderful meal on Sunday!
I have a 6 qt electric roaster that I use at least 1-2 times per week,....just love it. I used this on Sunday....and had this wonderful meal!!
Lean beef roast 1 lb carrots 4 large potatoes 5 ears of corn onions Lawry salt Pepper Coarse sea salt Water
Season roast and put on rack in roaster. Top with sliced onions. Add 1 cup water Roast at 350 for about 2 hours. Add water as necessary to keep 1 in in bottom at least.
Add peeled carrots. Cook 1 hour. Add peeled potatoes and 5 cobs of corn that you have cut in half. Salt all with coarse sea salt.
Remember to keep adding water to keep at least 1 in. of water in bottom.
Cook another hour or so.....check roast and veggies....can keep warm at lower temp as desired.
This is a wonderful "meal in a pot"!!
The corn was just wonderful!

Okay, stupid question...is this all Core? When we have roast beef in the crockpot, it always *feels* less healthy than when it's cooked in the oven. Maybe it's all the natural juices, etc...
Anyway, I guess I just feel a little guilty for having such a GREAT meal and it all being Core!!!

It is all CORE!
I don't use a crock pot....I use an Electric Roaster.....and put the roast on a rack in it. It is kind of like a crock pot.....but is called a roaster.
It is just as healthy as in the oven....less work.....and more moist!

I made this a few weeks ago and it was delicious. My family loved it. I used the electric roaster just like the original recipe. Very easy too!
