I threw this together the other day and it was very good. Seems to have potential for multiple serving styles.
1 can or 2 cups cooked black beans onion and garlic, chopped 1-2 large cans diced tomatoes (depends on preference; I'd use fresh in season) cumin, oregano, chile powder to taste (I used chipotle powder and it was wonderful) 1 small can huitlacoche aka corn smut (definately optional) lime juice
I ate this over romaine with diced avocado for a psuedo-taco salad. Add ff cheese, if desired.
I imagine it would be good over brown rice or polenta, too. If you were willing to use a few WPAs, it would make a good enchilado or burrito filling. It was a little too soupy for tacos, but draining the canned tomatoes would make a thicker mixture.

It's a fungus that grows on corn. In the US, it's a disease, but in Mexico it's a delicacy: www.gourmetsleuth.com/huitlacoche.htm I didn't like it the first time I tried it, but it's grown on me.
