Here's today's Italian version:
I took a can of Progresso Escarole Soup and added a half a can of white beans (drained and rinsed), 1/3 cup plain couscous, a little garlic powder, and a little crushed red pepper flakes. Mangia!

Safeway makes this fab frozen veggie blend called Primavera Vegetables: red pepper, carrot shreds, broccoli and spinach--Add it to any soup, e.g., chicken and wild rice--doubles the bulk and adds great flavour!

It's a dreary, wintery day in CT again and I'm searching the pantry for lunch...
a can lentil soup leftover couscous leftover peas and carrots dash of onion powder and curry powder
