I use Quaker quick cook barley, substitute broth for the water... beef, chicken or vegetable (FF of course). When it's done, add diced chicken, a little scrambled egg, FF parmesan and a dash of soy sauce. Kind of a mock fried rice

This is good with some mushrooms, onions, and green peas thrown in too! Also you can use quinoa instead of barley for variation. I have this quite often without the chicken as a side dish.

What exactly is the consistency of quinoa? I've never tried it... is it crunchy?
