We have a subscription to Cooking Light. Although some substitutions are necessary (e.g., ww pasta, ff cheese) it is a great source of core-friendly recipes. The web site is www.cookinglight.com.

I have 3 years worth of magazines stored in my kitchen, I love Cooking Light. The recipes always work, taste great and give you a decent serving size.

You can also buy their annual cookbook. I bought mine last year around this time on ebay. It cost me just under $20 or so and I actually got it before it came out. It is called: Cooking Light Annual Recipes 2004 Every Recipe...A Year's Worth of Cooking Light Magazine. I truly haven't tried any of them because I didn't do very well last year. But this year, with Core, I am determined to cook meals at home. I will post some recipes for you all.

The website has a free newsletter available. Just register and sign up for it. The topics are seasonal and I can usually find at least 2 or 3 to download to keep.

I just subscribed and received my first issue of cooking light. what a great mag! so many recipes are core or almost core. this mag is a definite keeper. ok, I have to try some of these recipes and then post them here with whatever tweeks to make them core. ;D

I have the Cooking Light Superfast Suppers Cookbook (in addition to a subscription to the magazine). It is a great cookbook! It includes a section of recipes for two, a couple sections of basic recipes that can be used as the basis for several different meals, and other good ideas. Some require a bit of tweaking to be core, but all the recipes I've tried are pretty good.
