This is a recipe that came with my crock pot (with some changes by me)
1/2 pound dry black beans (recipe called for a whole lb) 2 stalks celery chopped 2 carrots chopped ( I used a big handful of baby carrots) 1 onion ( I used a bunch of green onions) 2 chipotles canned in adobo sauce chopped ( I used 4) 1 can crushed tomatoes 1 can chopped green chilis 6 cups broth ( I used less and used water) 2 tsp cumin ( I added a big bunch of chard because I had some wilting in the fridge)
boil beans and let soak for 1 hour
drain and add beans to crock pot add all other ingredients
cook low for 8 hours add salt and pepper to taste
serve with cheese, salsa, cilantro, or sour cream ad desired
It is cooking now and smells wonderful!

This looks great. I am definately going to try this soon, and already printed it. I will probably use more chipotles, also.

I'm wondering how the greens hold up in the soup over a period of days? I want so badly to include them in my soups - but am fearful that it would make my soup icky in the fridge by Friday.
