Crockpot Lentil Soup INGREDIENTS: 2 cups dried lentils 4 cups water 4 cups broth (ff, any kind) 1/2 cup finely diced Canadian bacon 1/2 c. chopped onion 1/2 c. chopped celery 1/4 c. chopped carrot 3 tbsp. snipped parsley 1 large clove garlic, crushed 2 1/2 tsp. salt 1/4 tsp. ground black pepper 1/2 tsp. dried leaf oregano 1 can (14.5 ounces) diced tomatoes 2 tbsp. wine vinegar PREPARATION: Rinse lentils; place in cooker. Add 4 cups water, 4 cups broth and remaining ingredients except tomatoes and vinegar. Cook on LOW for 8 to 10 hours. Add tomatoes and vinegar. Turn to HIGH and cook 15 minutes longer, until hot. I made this without the bacon and it was yummy, so it's sure to be even better WITH bacon I also doubled the oregano, smelled like pizza! Maybe try shredded cheese on top of a bowlful

Had this the other day, leftovers the next, it was even the better the second day. DH is vegetarian so left out the canadian bacon DH loved it ;D
