Ingredients: 8 Boneless/skinless chicken thighs, trimmed of fat 1 large onion, peeled and sliced into sections 1 small bag baby carrots 1 Tbs. olive oil 1 can mandarin oranges in water, drained 1/2 cup water with the following added:
**(note: my family likes mild flavorings--if you want stronger flavors, double the amounts of the dry spices) 1/4 tsp. salt 1/4 tsp. ground cumin 1/4 tsp. cinnamon 1/8 tsp. red cayenne 1 Tbs. lemon juice
Spray inside of large crockpot with olive oil Pam. Layer ingredients in crockpot in this order: onions carrots water/lemon/spice mixture chicken olive oil oranges
Cook on high for 4 hours/ serve over couscous or rice

I wonder if you can use regular oranges. I bought too many.

I think regular oranges would work, if you take off all the bitter white part and membranes--

I tried this recipe and will make it again. I made it a little on the spicy side and served it with whole wheat couscous. Very good.

I made this recipe for some friends this weekend. It was a big hit. I doubled the spices to make it more spicy so it was truly wonderful. I'll be serving this on a regular basis. Thanks for the recipe.

I made this twice and it was good! I suggest doubling the spices and you don't need 8 pieces of chickn, 4 or 5 will do. Also, I used peeled apple section instead of mandarin oranges the first time and they worked just as well.

Okay, I made this with a few slight variations (I omitted the oil, doubled the spices, used chicken thights with bones because that's what I had, and added mushrooms because I had some I needed to go ahead and use). The last hour of cooking it smelled fantastic.
It's really good, and has a totally different flavor than anything else I regularly make.
And it was super easy to make (a biggie for me)

I made this last night, and had it over brown rice. It was great. I know what I am going to have for lunch today (minus the brown rice). I might even have it for dinner. I have a cold, and it reminded me of a spicy chicken soup. Yummm
