I made this in a desperate attempt to avoid having to cook my oatmeal on the stove for 30 minutes in the morning.
Sometime after dinner (maybe around 8pm), put 1/3 c. steel cut oats in slow cooker. Add approx 1 c water, 4 tbsp unsweetened applesauce, 1 dash pumpkin pie spice. Turn on slow cooker to lowest cooking setting (on my slow cooker this is setting number 3 of 5). Cook until bedtime (maybe 2 hours or so). Stir - will probably be slightly thickened. Re-cover, lower heat slightly (on mine I did 2.5) and cook overnight. In the morning, you will have 1-2 scrumptious servings of oatmeal. Lower heat to warm setting (on mine this is 1) until you're ready to eat. You may want to adjust the water so it's thicker if you like to add milk to your oatmeal. . . .
I bet this would be good prepared without the applesauce and then you could add frozen or fresh fruit before serving.

Just wanted to let you know I tried this and it did not work out well in my Rival crock pot. I kept it on the lowest setting ("warm") overnight - there was a hard, burned mess in the morning. Took forever to pry it off the pot.
Not sure what I did wrong - I may just have a more powerful crock pot than you do. Just wanted to let you know.

Daisy, I had a similar problem with my crockpot. I must have the same type you do. I only have three settings {OFF LOW HIGH} But I found if I make a larger batch and do it with milk instead of water and keep it on low the whole time, it came out pretty ok. Still a little crispy on the bottom, but then I stored the left over few servings in a tupperware in the fridge to eat the rest of the week. So up the liquid a little and maybe it will help Jeanne

I tried this and it came out great, except I used
1 cup steel cut oats 4 and 1/2 cups water 1/2 tsp salt (optional)
spray pot with pam, add water, then oats and salt, stir once, set on low for 6-8 hours. There will be a slight crust in the am but just stir it up and serve.

Gosh, Daisy, sorry. Thanks, everybody for including your adjustments. All slowcookers are different. I have a West Bend and it has quite adjustable heat settings. That must be key to the thing.

Thinking I was being so organized, I decided to try the oatmeal in the crock pot, welllll........... I sprayed the pot, mixed water and steel cut oats and plugged it in. The next morning, I found I had an entire crockpot of wallpaper paste I neglected to read the label..... INSTANT steel cut oats! Guess I cooked them a bit too long! LOL ;D
