This one has been floated out there often enough, I thought I'd post it here for everyone else to find.
2-4 boneless skinless chicken breasts 16 oz. salsa 1 can black beans, rinsed and drained 1/2 c. instant brown rice
Place chicken in bottom of Crock Pot. Stir together Salsa, Black Beans, and Rice. Pour over chicken. Cook on Low 5-7 hours, on High 3-5 hours.
It makes a wonderful meal. Add some FF refried beans, and it's complete. You might have to experiment with the rice, however. I've had it come out wonderful, and I've had it come out mushy. I'm not quite certain what the deciding factor in that problem was.

I made this, and the flavor was wonderful...but I (stupidly) used regular rice (not instant) and it was crunchy. We ate it anyway. Don't make the same mistake I did. Otherwise it was really good.

LOL! I've made that same mistake! You do have to be careful using the instant also, as it can get mushy if left for too long.

I threw this together today (didn't have can of beans so threw in can of Progresso Black Bean Soup). Didn't add the rice to the crockpost as I had some left over in the fridge.
I would use this again. My rice was a little crunchy (been in fridge since Fri night) so it would have been little better with fresh rice but definitely a keeper. A good change from the same old same old.

I've never had this, but I have substituted regular brown rice in crockpot recipes and I think you could probably do it here if you added a little water or chicken stock.
Just a thought.... I am a crockpot fiend! It's my favorite and most used appliance *beside my coffee pot of course ;D

I put this in the crockpot last night, and had a little taste this morning and it's DELICIOUS! I brought some in for lunch. Thanks so much for this easy recipe.

I made this for my family tonight and it wasn't very good. What kind of salsa should be used? I used Salsa Lisa's Mild Salsa. It may have cooked too long too.

Have you tried soaking your regular brown rice? In doing research in preparation of purchasing a rice maker and reading all the information on different sites, that was one instruction given for brown rice. Think it would help with this recipe, for those wanting to use regular brown rice.

I sort of made this with white beans, but I made the rice separate. It was tasty and filling.

i'm making this tonight... Do you eat it with anything else?? I am cooking it with whole chicken breasts but I was thinking if I sliced them up it might be good with WW tortillas...

wow this was really good. I added about 1/2 cup of water too...I didnt want my rice to be dry at all. I stirred it a few times as it cooked. Even my 20 month old liked it. I was surprised but she really pigged out on it and she is a picky eater. DH loved it and wants me to make it again. thanks for the recipe

I made this for last night. I used pinto beans instead of the black beans but it was delicious! I used medium pace salsa and the spice was fantastic. Thanks for the great recipe!

I made this last night and it was very good. I added cheese to the top. It would even be good with some FF sour cream.

I made this recipe on Saturday; used uncooked brown rice & upped the salsa amount and the water amount. It came out thick, like salsa soup! but very tasty - DH liked it! Thanks for the recipe!!

;D Just got a crockpot and am a convert. This was the first recipe I made and it was a hit! I would put a little more rice in and possible a bit more salsa but the chicken was so tender and tasty!
