Garlic Lime Chicken 1 lb bone in skinless chicken thighs (or 1 lb boneless skinless chicken breasts) 1/2 c lime juice 1 1/2 cups chicken broth 2 cloves garlic, finely chopped 1/2 tsp thyme, dried 1/4 tsp black pepper 2 tbsp oil 1 1/2 cup instant brown rice
Combine all ingredients except rice in crockpot and cook on low 8 to 10 hours.
During the last fifteen minutes, stir in rice.
ETA: Updated lime info, also increased rice amount. Plus, we make it with chicken "boobies".

Yeah, it is. Had to change one little thing, though. It calls for 1/2 c lime juice, which isn't core. So substituted the limes. That should be ok, right?

Interesting, isn't it? Lime and lemon juice have far less sugar than other fruits, that's my theory behind the reasoning anyway. Did you ever drink an 8oz glass of lime juice?

The only thing I can say negative about it is that it's a rather "beige" meal. So next time, I'll add a few veggies to give it some color!

Toss in a bag of pepper stir fry. With the onion and colored peppers, it'll be wonderful!

Made this again overnight last night. We needed something for lunches today, and let it cook while we slept. After DW finished her shower, she dumped in the rice to let it cook while we finished getting ready. Now we've got lunches for the next couple days!

Tried this recipe yesterday. First, I'll confess that I misread my printout and cooked the chicken on HIGH all day. I usually go check every hour or so if I have something in the crockpot. Well I was preoccupied watching the race and went in around 4:30 to check it and the chicken was dark brown to black on the bottom! It was still edible...we loved it but it was a bit too tart for our taste. Maybe increasing the broth and lessening the lime juice would help?
Also, I'd like to make a lot more of this at one time...has anyone tried doubling or tripling (is that even a word??) this?
AND, if you have one of the newer oval crockpots, you might need to make some adjustments to keep it from drying out. I still had my old 2 quart slow cooker and that's what I used instead of my crock.

I would like to know if I could add left over brn rice to it or does it hae to be uncooked, plan on making it tonight.
