This has brown sugar in it so it is not completely Core, but I took 1 point and enjoyed it very much!
2-3 lb lean pork roast 1 onion diced 6 ounces of tomato paste 1/2 cup brown sugar 1/4 vinegar 1 TBSP chili powder 1 tsp dry mustard 2 tsp Worcestershire 2 tsp salt
Combine all ingredients, cook on low 10-12 hours. Shred meat with fork and mix into sauce.
This could be eaten with rice, we had it on a Friday night so I took the WPA's and had it on an onion roll.
I made Core coleslaw to go with it.
1/2 cup FF sour cream 1/4 cup FF mayo 1 tsp celery salt 1/2 tsp dry mustard 1/4 tsp pepper 1 tsp splenda
Mix together and add pre-shredded coleslaw or confetti salad.
I thought it was very good and I don't like FF mayo or sour cream.

I got the recipe from Fix It and Forget It, which is an awesome crockpot cookbook that I use weekly.

Great Recipe!! I made this today in the crock pot.....i used brown sugar substitue instead (brown sugar twins) my crock pot got way too hot and all the sauce burned but the meat turned out great and it shredded fine, i just didn't mix it in with any sauce. DH loved it and is looking foward to trying it again with the sauce! I also used the recipe for the sauce (everything but the meat) and added it to canned pinto beans and heated it through for baked beans, again it was yum! 2 thumbs up!

I made this last night... I put it on before bed and let it to all night... and the sauce burned in my crock pot too I even added 2 1/2 cups of water before cooking, guess I should have added more. It smells great though! I am going to try and save some of the sauce that isn't burnt once it cools down a little and I'll let you know. Well, the meat cooled down and it shredded beautifully. I salvaged a little bit of the sauce to mix in adn it was really good. Next time I think that I would double the sauce and that I might also add a little but of liquid smoke. I really like somkey bbq sauce. It'll make a great lunch later today.

I made this today and it turned out good. I did add some beef stock as extra liquid to prevent burning, and I stopped the crock after about 7 hours. My crock cooks hot, so I kept an eye on it. I shredded the meat then put it back in the sauce. We filled Whole wheat pitas with it, and had core coleslaw on the side. Yummy.

Got up early this morning to get this started. I took advice I saw here and doubled the sauce recipe. So far it smells wonderful. I guess the others figured it out somehow, but in case anyone else is curious I have the same cookbook that Sooz got this from, and it's 1/4 CUP of Vinegar. I was still half asleep when I was doing this, and I got to that on my printout and was like "1/4 what?" LOL. Then I read the board again and saw where she got it from and looked it up.
Thanks so much for posting this! I had forgotten my Fix it & Forget it cookbook, there are a lot of great core or coreABLE recipes in it! They have a new one that's 'Light' - I may buy that one next.

Ah-HA, I finally had success with this recipe! The first time, I burned the sauce to a crisp. So I read all the ideas here, and put them together.
First, I doubled the sauce amounts. Second, I put it on for 8 hours on low. Third, I kept an eye on it, and added about a 1/4 cup of water about halfway through. Fourth, at about hour 6, I shredded the pork with a fork and let the inside meat get a chance to soak in the sauce, which helped cook off the last of said sauce perfectly.
YUM. And we've got tons left for lunches for the week, too. I might add a little more chili powder next time to give it some extra kick, but even without it had a good combo of sweet and tangy.
