I'd say this is as close to core as you could get with tiramisu. Count points for the powdered sugar, and I assume the liqueur. I got this from fatfree.com. Soon I plan to try it...
Lite Tiramisu
1 cup uncooked brown rice 2-1/2 vanilla soy milk 1 tablespoon instant coffee granules 1/4 teaspoon salt 2 cups frozen lite or fat free whipped topping, thawed 3/4 cup fat free ricotta cheese 1/2 cup 10x powdered sugar 2 tablespoons coffee liqueur Unsweetened cocoa
In medium saucepan, combine rice,soy milk, coffee granules and salt. Stir occasionally until mixture comes to a boil. Reduce heat to simmer; cover and cook 15 to 18 minutes or until rice is tender. Cover and refrigerate until chilled. In large bowl, combine rice mixture, whipped topping, cheese, sugar and liqueur; mix well. Spoon into individual serving dishes or medium-size serving bowl. Place cocoa in sifter of sieve; sift generously over rice mixture. Cover and refrigerator at least 1 hour. Serves 8.

Looking over this again, I don't know why you couldn't use Splenda in place of the powdered sugar. Since it's combined with other things, it'll still give that sweet flavor. I'm going to try this sometime this week. I'll let everyone know how it turns out then. Oh, and the soy milk would have to be plain, rather than vanilla in our case.

Okay, I made it. It turned out really good. I changed a couple of things in the recipe when I did it and here's what I did/what I used.
1 c. Wheat Bulgar 3 c. Soy Milk 1 T Instant Coffee granules 1/4 tsp salt 1/4 c. Splenda 2 tsp. Vanilla
In medium saucepan, combine above ingredients. Stir constantly until mixture comes to a boil. Reduce heat, cover, and simmer for 10-12 minutes. (I used the time according to the bulgar box). Cover and refrigerate until chilled.
2 c. FF Cool Whip 3/4 c. FF Ricotta Cheese 1/2 c. Splenda 2 T Kahlua
In a large bowl, combine bulgar mixture and above ingredients. Mix well. Spoon into individual serving dishes or medium-size serving bowl. If desired, sift some unsweetened cocoa over finished product. Refrigerate at least 1 hour before serving.
Serves 8.

have called many stores. no one carries ff ricotta anymore i am in pasadena, ca any suggestions? thanx

Have you tried Trader Joe's? They seem to have a bit of everything.
