I saw something like this on Everyday Italian. This is my modified version. It was yummy, even dh liked it.
1 fresh pineapple, ends cut off, peeled, and cut into 1" thick rounds (6-8)
1 pkg sf ff white chocolate pudding mix
2 cups plain ff yogurt
Mix yogurt and pudding mix together and let chill. I brushed a cast iron grill pan with the smallest bit of canola oil. If you have a nonstick grill pan or George Foreman grill, Pam should work fine. Grill pineapple for 2-3 minutes on each side, until grill marks appear. Remove pineapple from heat and top a slice or two with a dollop of white chocolate yogurt mixture. I will use a WPA or two next time and sprinkle chopped macadamias on top.
PS don't eat the center of the round/core. It's tough and yucky.
This really is pretty enough to serve to company!

Ooh, that sounds really good. I love to get fresh pineapples, but never can think of enough weay to eat the whole thing before it goes bad. This will defintely help!

ok, so I did go over to Melissa's for dinner again and she made this. SOoooooo good! And that's a great picture of it!
