I think this is a great dessert with a glass of milk, kinda has the taste of a big oatmeal cookie:)
Baked Oatmeal
2c of oatmeal 1c of milk 1 1/2 tsp baking powder 1 tsp salt 2 eggs 1/2 c apple sauce 1 tsp vanilla 1 tbsp cinnamon 1/2c of splenda
Oven 350. Mix all ingredients. Pour into pie pan sprayed with PAM. Bake 30minutes.
i cut it up just like a pie, 8 pieces. You can also get creative! add some fruit, mashed ripe banana, cut up apples, pumpkin...you name it!
It freezes great too and i use it as a breakfast on the go.

I made this tonight, wanted to have a special dessert for company that I could eat too--
I used soy milk, and instead of splenda I used 1 TBS. of honey.
I cut up ripe juicy pear slices and layered them on top before baking, in a concentric circle, curvy side out--it looked like a rose--I sprinkled the pears with cinnamon, baked it for 40 mins., and it was gorgeous and delish!!
I gave away the leftover, so I wouldn't eat it all-- my guests plan to have it warmed up for breakfast!

This sounds delish, I'm going to try it sometime this weekend. Question, is it quick oats or the old fashioned oats? And I'm assuming unprepared. Thanks!

Has anybody actually added pumpkin? How much and do you leave something else out? Too bad raisins aren't core!

I have added pumpkin. The recipe I used called for 2 mashed bananas and I used a little over a cup of pumpkin with pumpkin pie spice. I'll confess that I did make it with raisins once and counted .5 WPA for each servings. Too bad NUTS aren't core!
Yesterday I made a yummy one with frozen blueberries and lemon zest. I also added a little nutmeg and ginger.

Thank you for the recipe! I just started core and was in need of something to have as a snack or a breakfast! (I've had regular oatmeal every morning this week!). To those who asked, I did use the quick cooking oats and it came out great. I didn't have any applesauce so substituted a mashed banana and that worked fine as well!

If you are asking about the one with blueberries and lemon, I didn't really have a recipe. To the recipe at the beginning of this thread, I added:
approx 1 cup frozen berries (blueberry mix) 2 tsp. lemon zest dash ginger dash nutmeg I also squeezed some of the fresh lemon juice over the berries before mixing them in. (Adding it to liquid ingredients will curdle the milk--can't tell whether that matters).

I made this last night. My brother was over and the 'guys' normally wont go near anything I make, as I have been the one who makes 'weird stuff'. -note: I made this completely core compliant.
I barely got this out of the oven when they all wanted to know what it was and before I could say anything - were taking slices out of it.
THEN, the suggestions started pouring in. My favorite idea came from my brother-(same idea as Juliett). Take 2 pie plates (or reduce the recipe in half) then take fresh sliced apples and place on top. Load it up with cinnamon. I WILL be trying this.
I know many out there refuse any baked good concept - but I've never gone wrong with oatmeal - it is a staple in my diet.
