Crockpot Grains Etcetera
From: Lean & Luscious & Meatless By: Bobbie Hinman and Molly Snyder
1/4 C quinoa, uncooked, rinsed 1/4 C barley, uncooked 1/3 C brown rice, uncooked 1 C chopped onions 1 C chopped green pepper 1/2 C finely chopped carrots 1 1-lb can kidney beans 1 8-oz can tomato sauce 1 1-lb can tomatoes, chopped, drained (Reserve liquid) 1 1/2 C canned or frozen corn, drained 1 tsp dried oregano 1 tsp dried basil 1/2 tsp garlic powder salt and pepper to taste
Combine all ingredients in a crockpot. Add water to reserved tomato liquid to equal 2 1/2 cups. Stir into grain mixture.
Cover and cook on low setting 8 hours. Stir before serving.
Makes 8 servings.
