This is modified (not much) from the WW Turnaround cookbook. It's supposed to be stuffed in cabbage. It's good that way, but I like to just eat a bowl of the filling. I use WPA and have some light sour cream with it too.
cook barley according to package directions. (I start out with 3/4 cup barley, and 3 cups of water)
1/2lb of ground turkey breast
1 small onion chopped
1 package taco seasoning mix
2 tsp olive oil
sweat onion in olive oil, then add and brown turkey. Once turkey is no longer pink, add cooked barley and taco seasoning. That's it. Simple, eh? I sometimes do the barley in my rice cooker, makes it even easier.
