A friend's mother brought this to our Core Christmas dinner. I had to have the recipe
Boil salted water in a large frying pan and blanch asparagus. Have a bowl of salted iced water waiting to stop the cooking. Drain, put in marinating container with fat free italian dressing and balsamic vinegar, about 1:1. If it seems too tart, add a little splenda to mellow it out.
This is really good when allowed to sit for a few hours.

This is a dumb question, but do you eat it cold?? Yes, eat it cold. Although it tastes fine if it's sat at a potluck for a bit and is room tempreture too.

I am jealous too. I haven't been able to find good asparagus here.

On Christmas my DH steamed some asparagus putting chicken stock in the bottom, then added some balsamic vingarette dressing in, popped the dish into the frig. When it came out he added some cheese, but I took some out first for me, then served it. It was sooooooooo good that no-one could believe how easy it was. Definately a family favorite!
