I made this up Saturday using stuff I had in the house. You creative people can substitute any fresh veggies you like, season to your taste, use onion instead of shallot, different beans, etc. etc. ... 1 can plain pumpkin 29 oz. Shop Rite brand or you could use two 15 oz. can Libby's 1 can fat free chicken broth, 3 cups water 1 sweet potato, peeled and cubed 1 zucchini, not peeled but cubed handful baby carrots, cut up a little 1 can black beans, drained 2 stacks of celery, chopped 1 shallot chopped some Mrs. Dash for seasoning, regular and chipolte Mix all together in a soup pot, bring to a boil then simmer until the veggies are soft! It was sooooo good!

Leftovers?? What are they LOL! Oh did you mean did I freeze some of the soup for later consumption...yes yes I did! ;D I have some in the freezer and some in the fridge...as a matter of fact I am having some of this soup for lunch today!
