This is literally the best soup I've ever eaten. It's a traditional Morroccan recipe.
Harira Serves 4-6
1 TB EVOO 1 lb skinless, boneless chicken thighs cut into bite-size chunks 1 chopped onion 1 bunch parsley, leaves chopped 1 bunch cilantro, " 1 tsp tumeric 1 cinnamon stick salt and pepper 1/2 cup lentils (red or green) 6 cups liquid (water, chicken stock, or a combo of the two) 1 can chick peas, drained and rinsed 2 tomatoes, chopped, or 1.5 c. canned tomatoes 1/2 cup ww angel hair pasta or vermicelli juice of one lemon
Heat oil in pot. Add chicken pieces and sauté until browned. Add onions and sauté until soft. Add cilantro, parsley, and spices. Add spices and sauté 1 minutes. Add lentils and water. Simmer for 20 minutes, or until lentils are soft. Add chick peas and tomatoes and continue to simmer until lentils are completely cooked, about 20-30 more minutes. Add pasta. When tender, add lemon juice and adjust salt.
Seriously delicious.
