I got this recipe from a WW meeting:
In a medium pot, mix the following:
1 can Progresso Minestrone soup
1 can chopped tomatoes (option: chopped tomatoes w/mild green chilis)
1 can corn
1 can mixed veggies
1 can white (or other) beans
2 caveats:
The Progresso has a few noodles in it. I didn't realize and am counting a point or two for them (not much, cause you don't eat the whole can).
The mixed veggies I found included potatoes. I would look for them without in the future. (or just eat it for one meal out of the day).
Otherwise it's totally core. I might play around with spices and that next time, but it totally doesn't need it (esp. with mild chili chopped tomatoes). It's just dump, heat and eat.

I've doctored canned soups (I especially like Progresso Vegetarian Vegetable with Barley) with fresh vegetables. It's so much better than just the plain canned soup.

Sure, sure, so do I--when I have time to shop and chop. The nice thing about this recipe is that I can keep the cans on the shelf and dump them in a pot when I have no fresh veggies or time to chop them. The different ingredients compliment each other and make for a better-tasting deal than a single can of soup.
