1 small onion, chopped 1 large carrot, chopped (or 5 baby carrots) 1/2tsp thyme 1 clove fresh garlic sea salt (any other seasonings you like, to taste) 1C dried red lentils 2.5C water
You can sautee the onion in some olive oil before adding the rest of the stuff, but I was short on time and patience so I just put it all in the pot at once. bring to a boil, then cover and simmer for 20 minutes or so, stirring occasionally, until lentils are tender. (Don't be alarmed, if you've never had red lentils before they turn yellow when you cook them)
That's it! Quick and easy - very filling. The lentils lend so much flavor that tons of spices and extra veggies just aren't necessary.

Just curios,I never had red lentils do they taste the same as the brown.
